Calashouns (Half-moon shaped baked Easter pastries)

Ingredients

Dough:
2¼ cups semolina flour
3 eggs
1 Tbl water
1 Tbl Olive oil
¾ tsp salt
Filling:
3 LBS Ricotta chees
½ lb Imported Romano cheese
1 Tbl black pepper
3 lg eggs
wash:
2 eggs

Directions

Dough:
mix in food processor and roll very thin #5 on pasta machine,
cut 4″ round pieces fill with 1 tbl of filling, (see below)
Filling:
Mix well, stuff with 1 tablespoon onto 4″ round dough piece. Fold in half and seal edge with fork tines.
Beat 2 eggs for wash and brush tops before baking.,
Bake 400 15 minutes or 375 15 – 20 minutes
