Chinese Lemon Chicken

Ingredients

4 chicken breasts skinless and boneless
½ corn starch
3 tablespoons water
4 egg yokes beaten
salt, pepper
6 green onions mostly white and then green sliced thin and on the slant
oil for deep-frying
YOU CAN ALSO JUST BUY FROZEN CHICKEN PIECES WITH BATTER OR NUGGETS
Lemon Sauce:
½ cup lemon juice
1 small lemon (cut off both ends and slice thin)
2 chicken stock cubes smashed
2½ tablespoons Splenda brown sugar blend
2 tablespoons honey (I use a sugar free jam that has either pineapple or other light colored fruit)
2 tablespoons cornstarch
1 teaspoons minced ginger
1¾ cups water

Directions

In sauce pan: combine lemon juice, lemon slices, chicken stock cubes, cornstarch, honey/jam, brown sugar and water. Stir over low heat until sauce boils and thickens.
To make chicken: cut breast into 6 strips and then cut strips in half. Put cornstarch into bowl and water and lightly beaten egg yokes, add salt and pepper then mix well. Heat oil till hot, then dip chicken pieces into batter then fry. When browned and cooked, remove from oil and drain on paper towels. Place all the chicken pieces on large plate and pour the lemon sauce over it. Sprinkle with the green onion.
