Ingredients

1 1/4 pounds Spinach
1 onion
1 cup plain yogurt
paneer
1/4 cup vegetable oil
1 tsp cumin
garlic
1 tbsp ginger
1/4 tsp cayenne pepper
salt

Directions

– Cook cheese until lightly browned, removing browned paneer onto a plate
– Saute onion until translucent, then add seasonings.
– In separate pan, boil spinach; or microwave frozen spinach
– Combine and mash together
– Season with salt as desired, stir, add water (1/2 cup) as needed
– Leave on heat until all liquid evaporated, cooking about 5 minutes with the lid off
– Turn off the heat and add in yogurt, a little at a time to keep from curdling
– Stir in cheese, cover and cook until everything warmed through about 5 minutes. Serve
